A Week of Dinners From Tired Parents Who Are Trying Their Best

We are not a “Pinterest” board dinner household majority of nights. Honestly, I barely do any of the cooking! My husband is the chef of the house and for that I am thankful.

Trying to feed a teething toddler AND a pregnant mama… let’s just say hubby is a trooper because we are BOTH extremely selective.

So here’s what dinner actually looked like this week. Some perfectly rounded meals, some frozen meals, and some take out. We made it. We are celebrating, lol.

Sunday: Hawaiian Chicken Sheet Pan

Okay this one actually was off my Pinterest board but it was EASY PEASY (here). Throw it on a pan and bake it. Fast clean up, well rounded, full bellies.

Monday: Frozen Pizza

Red Barron to be exact – my preggo go to. My kiddo actually had a frozen KidFresh meal because we have cut dairy out of his diet. Frozen meals to survive are okay!

Tuesday: Barbecue Sandwiches, Baked Beans & Fries

A crockpot is my bestie! This just took a chuck roast in the crockpot all day and a bottle of barbecue sauce. We like Sweet Baby Rays with a little bit of coleslaw on top! Choose whatever sides you like and throw it on a plate. My kiddo loooooves this meal.

Wednesday: Spaghetti

A household staple here for quick dinner. Sometimes my husband will make sauce from scratch but when it’s me, it’s store bought. Spaghetti is my all time favorite food – add a side salad and you have a perfectly balanced meal!

Thursday: Baked Chicken Thighs

This is a weekly rotation here. I like bone in, skin on thighs because they get nice and crispy! My favorite way to bake these is to chop some cabbage, throw it in a glass baking dish, place chicken on top, bake at 400 degrees for about 40 minutes. We usually do potatoes or a sweet potato with it!

Friday: OUT

We went out Friday because we didn’t feel like cooking, lol

Saturday: Papa Johns

We spent Saturday catching up with family and they treated us to dinner from Papa Johns! We ordered some chicken wings for my kiddo. Can’t get any easier than that.

Sunday: Brisket Nachos

Now this dinner is not what I would call a “lazy dinner” if you’re the one making it (for me it totally was because I didn’t have to lift a finger). My husband smoked a “poor mans brisket” (chuck roast) on the smoker all day and then we made nachos out of it. It was delicious! If you don’t have a smoker, you could do some steak nachos – those are just as good.

If you are a tired parents and don’t feel like your dinners are good enough, I promise you are doing just fine.

We are working, feeding little humans, growing babies, and doing a lot! It never needs to be impressive, it just needs to be enough.

and sometimes that looks like pizza night twice and a frozen meal. 🩷
